Tasting Notes
Lively, bright straw in colour, this wine displays aromas of lychee, pineapple and rock melon. Subtle hints of toasted cashews, butterscotch and baking spice are present throughout from aging in 30% new French oak along with 9 months on lees to create a rich hazelnut cream base. Complex flavours including lychee, nectarine, and mandarin zest paired with a creamy mouthfeel are balanced by an acid backbone that leaves a generous finish.
Winemaker Notes
The Chardonnay was harvested in the cool of the and gently pressed in our basket press. A cool fermentation followed to retain varietal characteristics. The wine went through partial Malolactic Fermentation in 30% new large format French oak puncheons. The wine was stirred periodically to develop secondary characteristics and mouthfeel.

Pairs well with roast chicken, herb crusted salmon or mushroom risotto.
