Wine Profile
Tasting Notes
The 2021 First Chapter Shiraz shows dark purple hues with vibrant aromas of blueberries and raspberry licorice complimented with hints of nutmeg and vanilla bean. The palate is rich with bright fruits; ripe boysenberry, blackberry and mulberry perfectly balanced with hints of toast and baking spices. Smooth, velvety tannins are deftly tensioned with tight acidity creating a luscious finish.
Winemaker Notes
2021 was an ideal vintage for Shiraz. Late winter rains, warm days and cool nights allowed for optimal ripening and to showcase Shiraz’s rich flavours. This Shiraz was fermented on skins for 7 days with pressings added back to add depth and structure. Aged for 14 months in American and French oak hogsheads to reinforce and soften the structure, this wine is still young in the bottle and will continue to develop for 5-10 years.
Food Pairing Notes
Grilled meats and roasted peppers, Wagyu cheeseburger, BBQ sweet ribs, aged Gouda.
