Wine Profile
Tasting Notes
The 2017 Commitment Shiraz is deep, dark purple in color leading to aromas of plums and black cherries complimented with hints of eucalyptus, beetroot, aniseed and black pepper. The palate comes alive with tastes of light vanilla and sweet berries complexed with characters of cloves, nutmeg, coffee, fennel and dark chocolate. Velvety, soft tannins tensioned with tight acidity create a long toasty, cherry licorice finish.
Winemaker Notes
2017 was a cool year for Shiraz, slow ripening and full of complex flavour this Shiraz was fermented on skins for 7 days with pressings added back to add depth and structure. Aged for 18 months in American and French oak hogsheads to reinforce and soften the structure, this wine is still young in the bottle and will continue to develop for 10+ years.
Food Pairing Notes
Chargrilled steak, roast pork, BBQ sweet ribs, aged English cloth cheddar.
